Duckie Sugar Cookies

I was given 2 fun cookie cutters by a co-worker of mine so I had to try out the ducks as it goes along with a theme of an upcoming Birthday for my little Nephew Declan. I was too lazy to bring out my better camera! Sorry for the poor quality pictures!
 

 

 

 

Super cute and very yummy! I made these cookies a bit thicker along with 2 tsps of vanilla... the extra vanilla and thickness of the cookies really add to the flavor and don't make the icing so overwhelming when putting this much icing on a cookie!

News & Updates for Cupcakes by Holly the Website

My website is take a bit longer to put together than I had hoped! I finally have tracked down a supplier for cupcake liners and will make an order soon. There are a tonne of birthday's coming up for February so I will have some new pictures and projects to add to the website!

Also, very exciting, Carrie from Bella Cupcake Couture is going to post one of my pictures of her product on her blog. What a compliment! She is a busy girl but said she would have it up in the next couple weeks... I will add the link to my blog when it happens!

More Marshmallow Fondant Practice

I hope these taste good! I first flattened the top of the cupcake... added some chocolate icing to hold the fondant in place... scored it to look like a cushion (I have since found the scoring doesnt last, I think regular fondant might not have as much spring as the marshmallow) and then monogrammed them with more chocolate... finished off with a flower! I did the 'B' for Brian with a little crown (kind of a joke from a shirt he has!)

Yes, I know I did these a year ago... however, I made some big changes! I used more colors for the butterfly wings and added flowers on a green background instead of plain yellow. Also I thought it would be a fun project and photoshoot for my website... and there is a birthday at work on Monday so I can hand them out!!

I went to my favorite baking store yesterday, unfortunately it is on Vancouver Island! There are a few birthdays coming up that I am planning some cakes for so I went a little bit overboard on the new stuff! (but I think it has to be done sometimes!!!)

Rainbow Cake with Marshmallow Fondant

Sorry for the lack of pictures on this one! After getting a new laptop and switching things around I am having a bit of trouble retreiving pictures off my little camera! Anyhow... this super fun cake was just a practice cake for things to come (Cali's birthday). The super bright rainbow cake inside was made with a plain white betty crocker cake mix. I used butter milk instead of water or milk and I used full eggs instead of just the whites. I divided it into 6 parts (aprox 3/4 cups each) and used a 1/2 tsp of gel food coloring to get the vibrant color. Cook time was exactly 10 minutes for each layer (I only have 2 round 9" pans, but it didnt take too long). I did not wait for the parts to cool completely as I wanted them to stick together. After that, I 'dirty iced' the cake with butter cream and then took my first shot at marshmallow fondant. Let me just say, it was sticky as anything! Use crisco on your hands!!!! After a taste test by myself last night and then today a few of the girls at work, we all agreed, marshmallow fondant was the way to go as it tastes amazing! Red Velvet Cupcakes

So I got a new book for Christmas from Brian. Martha Stewart's Cupcake Book. Its a great book with lots of unique recipes for fun cupcake flavors. The decorating isn't comparable to Hello, Cupcake but flavors are the point of this book!

I decided to start off by making Red Velvet Cupcakes. They are basically a white cake mix made with buttermilk, cocoa and vinegar. You frost it with a cream cheese frosting. The most notable thing about the Red Velvet is the blood red color. I followed the recipe exactly, and too my disappointment, the red was more of a tomato than blood... however, the taste is still just awesome! I will have to make another attempt at these around valentine's day and kick the food coloring up a notch! (I will try to remember to post some pictures tomorrow as I still have a few cupcakes left!!)
